The legend tells that King Alfonso X “El Sabio” established the tradition of serving a small portion of food always with wine in the Castilian mesons. The idea was born in Cadiz during a windy day following a story in which His Majesty was served wine with a slice of ham as “lid” (spanish: tapa) to prevent sand entering into the cup.
